I like the Cuda scissor. It's small and cuts nicely
It's hard to beat a good pocket knife on a boat

This one will do almost anything while you're out on deck and before you need to go digging through tackle and tools

I use my filet knife. If you catch a blackfin and want to filet for chunk the deckhands usually have one on the ice chest.
