Wahoo marinate

I ran across this wahoo recipe and it is awesome...
In a blender or food processor mix
1/2cup melted butter
1/2 cup Extra virgin olive oil
6 cloves fresh garlic (peeled and chopped)
1/3 cup fresh cilantro ( usually one bunch)
2 tablespoons of cajun seafood seasoning
Juice of 1 lemon

this amount should do 4-6 good filets..
I put this on some wahoo filets about an hour before putting on the medium hot grill.
Use nonstick or foil on the grill and brush filets again- each side while cooking..
use the extra sauce over some fresh pasta or on fresh bread...

This sounds decent, but I wouldn't put the lemon until a few minutes before grilling. The acid will "cook" the fish and make it dryer and tougher than leaving it till the end.

That does sound good!! And as luck would have it I have one bag of Wahoo left in the freezer! Probably try it next weekend.

I have never had an issue w/ the lemon juice over cooking the hoo meat.. I will whip some up this week as well..
dont forget to get some fresh french bread to dip up the remainder of the pesto..

I never had a problem with my lemon/lime juices cooking my cerviche to any dryness.
I never cook my wahoo long enough to dry it out.
I will try leaving the citrus juices out until the end in the future.The wife does not care for them much anyway.

Great marinade Bret. I wish I had some wahoo hot off a green egg.
