Tuna Poke

Cube up approx 1lb. of the Yellow Fin Tuna or Blue Fin Tuna (skipjack and bonito work also) into 1/2 inch cubes.
-add approx 2 tablespoons of soy sauce
-approx 2 tablespoons sambal oelek
-1 pinch or more to taste of Hawaiian sea salt
-1/2 cup chopped green onion
-1/2 cup diced Maui sweet onion
-approx 2 tablespoons brown sugar
-1/2 to 1 teaspoon of sesame oil
-1 tablespoon ground fresh ginger
-1 cup fresh seaweed
-1 tablespoon some toasted sesame seeds.

I add 1 cup of some dice peeled cucumber and fresh red peppers sometimes.

Mix it up and put in the fridge to chill for a bit and you are good to go.

Serve with some diced avocado and tortilla chips.

Don't forget a cold one or two

could you substitute this: Huy Fong Sriracha Chili Sauce, 17 Ounce Bottle (Pack of 6): Amazon.com: Grocery & Gourmet Food
which can be found at almost any grocery store.

Yeah you can use that. It's pretty much the same as the Sambal Oelek except the Sambal Oelek ha some chili pepper flakes in it. You can see the seeds in the link provided. I've used the Sriacha when I was out of the Sambal Oelek.

I edited the amounts. When I cook I don't measure anything, bakers measure. I adjust to taste. The above amounts are approximate, adjust to you liking and how much you want to make.

You can use regular sea salt instead of hawaiian sea salt. Just don't use table salt. You can leave out the salt and use a little more soy sauce since that has a lot of salt.

You can find maui onions at most good stores with a good vegetable section like Whole Foods, Fresh Market, etc. Or you can use a regular onion, just use a little less as they are more powerful than the maui sweet onions.

You can search different ways to make it. Play around with it and find what you like.

You probably can, just know they won't taste the same

Siracha is sweet & hot, in a smooth watery paste

the other type is hot & salty, with chili pepper seeds in
a thicker paste
