Mahi recipes

I'll be heading to guatemala soon and our biggest "bycatch" is mahi. I need some recipes besides just grilled or maybe some favorite sauces to go on grilled. Yea, i have to cook one dinner, so all help is appreciated- Thanks in advance.

do you have a fryer? Make dolphin fingers and dip them in a sauce of lite mayo, hot sauce and chili powder...you'll never want chicken wings again.

If making a sandwich, try a sauce made of chilis, oranges and grapefruit... blended and boiled down bit into a sort of reduction. its awesome, great on shrimp too.

Mahi might be the best fish in the ocean.....fight hard lb for lb....awesome colors....aerial theatrics.....school up like crazy....taste awesome.....can be caught all over the world. NOTHING BEATS EM for overall quality fish

Freshly caught mahi mahi makes for great sashimi, if you aren't into raw fish then a simple pan fry with salt, pepper, fresh minced garlic, a good white wine, and some butter makes for a great combo. Capers would be an added bonus, just make sure you don't overcook the fish. You could always make fish jerkey as well, Cut the fish into 6" strips about an inch to 2 inches thick, sprinkle in salt on both sides, place on a metal cooling rack over a pan to catch the juices that will drip from the fish, keep in your refrigerator for two days, and give it a full day of drying in the sun on the third day, if sun isn't available then place the fish in front of a table top fan for a few hours, outside of the fish should be firm and the inside of the fish should be on the soft side. Serve chopped into bite size pieces with you favorite beer as an appetizer.

Take blackening mix (dry powder), some cream, some chopped tomato, garlic, cilantro, make sauce. grill or broil lightly, until firm but not to much. Ladle sauce on top, wild rice and crisp french bread as side. Next, grab a really cold Carta Blanca and enjoy!!

you can cook this fish in many different ways and
it'll still taste delicious, as long as you don't over
cook

my favorite is ceviches (mexican style with extra
jalapenos )

blackened with Tony Chachere's creole seasonings

or simply cast iron skillet with sea salt and garlic

if you prefer Thai flavor, serve with hot fish sauce
and mints

Grilled with a mango salsa. Salsa is very easy. Tomatoes cilantro red onion mango, peaches if u like, and lime juice. Let the salsa stand over nite to bring out flavors.
