Are they for sale?
The blue ones are for my Aunt's Birthday coming up and the Artifex is my own, but I do have another Artifex knife here that is unspoken for that I can rehandle. I also have a similar Nakiri I can rehandle as well. It's a Tojiro Nakiri in White #2 steel, the blue handled one is a Tanaka in Blue #2. Both are high carbon steels from Hitachi. The White will take a little finer edge and be easier to re sharpen. The Blue #2 doesn't take quite as fine of an edge and is a bit harder to sharpen, but may hold the edge a tad longer. Both will Patina with use.
I can get burled woods in green, red, blue, purple and sometimes black or yellowish.
that sycamore burl is interesting wood with a different grain pattern.
Yeah, its some cool looking stuff all right! It's a repeating figure, but looks pretty cool. It may be quarter sawn or something. If you cut it another way, it looks more feathery.
